Background info: 

We don't often find ourselves sourcing from the same producer year on year but there's just some relationships the holds dear to us here at Cedar. We were fortunate to showcase another stellar lot from Gesha Village our third time coming. 

E-07 is a lot from the Gaylee block of the farm where an Ethiopian Heirloom varietal called Illubabor Forest 1974 is grown, a disease-resistant varietal. As the farm is known for its immaculate Gesha Varietals, this coffee shares a picture of the diversity of coffee on the farm. This shows the perfect contrast as this varietal reflects bold tropical notes and heavier undertones.

The process is Natural Semi-Anaerobic, where freshly harvested coffee cherry is placed inside sacks with the top tightened. The sacks are covered with a double layer of plastic to limit the amount of oxygen exposure during fermentation. After 82 hours of fermentation the coffee is sun-dried for 11 days until a moist content of 11% is achieved

This all contributed to the wild notes we picked up through our tasting process. On filter we picked up notes of Red Grape Juice a combination of the mouthfeel and a lighter intensity of red grape as well as Papaya. On espresso these notes carry through with more emphasis on tropical notes such as Papaya. On Milk the structure changes quite a bit and transforms this fruit bomb into Chocolate Mousse, either brew you're spoilt for choice.
