Background info:
Another Panama lot but this time we working with Ruiz Family's neighbouring farm the Augustus Estate. Another stellar farm known for its prized Geisha and Red Catuai, we decided to focus on their Red Catuai.
This coffee has a little twist to it as this lot has gone through an anaerobic natural process. The coffee is placed in a sealed container for 48-72 hours. This extended fermentation process allows the pulp to intensify the bean's flavour.
We picked up constant notes of citrus throughout the brews with a prominent note of Red Apple especially on filter. The espresso transformed into deeper stewed fruits reminiscent of a Safari Fruit-roll. The milk was quite tamed with notes of sweet shortbread and key-lime pie. Our preferance would be to enjoy this coffee black.
