Background info:
Our second Rwandan for the year but from the same producers that brought us Shyira. Muraho Trading Company have made it their mission to showcase the fruits of Rwanda's terroir. This time around we highlight the Rugali washing station built in 2016.
The cherries are hand-sorted before a pre-pulp float, once it is sorted and clean they are left to be dried. They are laid on raised beds for 30 days to receive constant airflow throughout the process.
With our previous release being a washed process we decided to compare it to our new naturally processed lot. The Red Bourbon variety leaves it's distinctive berry notes. We found with this lot we got a mixture of fruits reminiscence of a fruit cocktail juice on filter, on espresso we picked up more of a blueberry flavour note. The milk beverage was interesting as it provide notes of a combination of malt and honey very pleasant.
