Background
Our latest Special Release Decaf comes from Finca Las Flores, a family-run farm in Acevedo, led by second-generation producer Jhoan Vergara, who has helped shift the farm’s focus toward high-end specialty microlots built on precise fermentation and technical innovation.
What drew us to this coffee is its processing, a Thermal Shock Washed Anaerobic method that pushes clarity and intensity at the same time. The coffee undergoes controlled anaerobic fermentation to build depth and aromatic complexity, followed by rapid temperature changes that help lock in volatile flavour compounds before a clean washed finish. The result is a cup that is both structured and expressive, with a clarity that still feels vibrant and alive.
We chose to release this as our Special Release Decaf because it completely challenged our expectations. Rather than being soft or muted, this coffee is bold, character-driven and unmistakably unique. It’s a reminder that decaf doesn’t have to be a compromise, it can be something worth seeking out in its own right. The caffeine is removed using the Swiss Water® Process, a chemical-free method that uses water, temperature and time to gently extract caffeine while preserving the coffee’s natural flavour. This approach allows coffees like this to retain their complexity and sweetness, even without caffeine.
In the cup, we found Turkish Delight on filter, a vibrant Tropical Candy sweetness on both filter and espresso, and a smooth honeycomb note when paired with milk. This is a profile that feels playful, expressive and far from what you’d expect from a decaf.
