Background info: 

We’re excited to bring you our latest release: Panama Las Bromelias from our friends at K&R Specialty. This is also our second year bringing in Panama lots directly from it’s source and just highlights the relationship we have built with the team in Panama. This lot stood out for its citrus-driven acidity, tropical fruit notes, and a good amount of body; a coffee that really kept us on our toes in the roaster but rewarded us with layers of flavour in the cup.


This coffee comes from Las Bromelias farm in Boquete, Chiriquí, sitting at 1450 masl. The farm focuses on the Pacamara variety which is a cross between Pacas and Maragogipe. It is known for its large beans, broad flavour spectrum, and competition-level quality. Pacamara isn’t easy to roast, but when you get it right, it delivers something unique.


This is a naturally processed coffee, which means ripe cherries are carefully hand-sorted, then laid out on raised African beds to dry slowly under the sun. They’re turned regularly for airflow and even drying, and left to dry fully until they reach 11% moisture. This slow process brings out a bold fruit character and natural sweetness, while keeping the cup clean and balanced.


In the cup, we picked up a strong citrus acidity running through both filter and espresso, paired with tropical fruit flavours and a solid body. The standout notes were mango sweetness and kumquat, supported by hints of dried fruit. With milk, it turned dessert-like, reminding us of baked cheesecake and even melted vanilla ice cream.
