This processing method is different to the Supernatural as this lot undergoes Carbonic Maceration. What this means is that coffee is placed in sealed tanks with CO2 to control yeast activity, temperature, and humidity. It then undergoes an extended anaerobic fermentation where the whole cherry ferments at cool temperatures for an extended period. It then goes through a slow drying in thick stacks over 25-35 days to achieve optimal moisture levels.
