Background info: 

Our second Nicaragua for the year seems only fitting as we start off the way it all began. This time around we're showcasing Donald Lopez and his farm Finca San Roman in Nueva Segovia. We got the opportunity to source this coffee through our friends Quaffee who work with Caravela; a renowned international importer that has worked with many award-winning farms throughout their journey.

We prefer working with farmers that are constantly pushing their knowledge and farming practices. Donald had made the transition early in his farming career to switch his focus from conventional coffee to specialty. He even tried his hand in Nicaragua's Cup of Excellence competition where they judge the best coffee in the country.

Our initial thoughts on this coffee were how delicate we found it on filter; bright acidity with dried apricot notes. These notes were altered through espresso and milk-based as we found a wafer biscuit sweetness - nothing too overbearing. This coffee is well structured leaning on the light side in terms of mouthfeel but with an enjoyable sweetness.
