Background info: 

Our first coffee from El Salvador, another country we can put under our tasting/offering belt here at Cedar. We enjoy exploring all coffee regions so when we got the opportunity to grab this coffee we just had to showcase it. 

This community lot comes from the renowned Apaneca-Ilamatepec region where most of the best coffees in El Salvador comes from. The terrior definitely plays an important role here with its mineral rich volcanic soils and high altitudes ranging from 1000 - 2381 masl, this provides a cooler climate that aids the development of complex flavours. 

This natural felt quite refined nothing overly fermented. Instead of boozy fruits we picked up notes of tamarind and lime on filter. The lime was still prevalent in the espresso with notes of cola coming through. The Milk drink was quite the stand out with notes of chocolate mousse as the sweetness was complemented by the velvety texture.
