Background info:
This is our first coffee release from Ecuador and probably a first for some of you as well. We don't often find these coffees within our local coffee scene but we feel it is important to highlight coffees that are unfamiliar and showcase their character. Coffees coming out of Ecuador have so much to offer in terms of cup profile and structure.
For this coffee, we are showcasing Manuel Efren Jimenez's coffee farm La Cascarilla. This is the second coffee we've been able to source through our friends Quaffee who work with Caravela; a renowned international importer that has worked with many award-winning farms throughout their journey.
Our initial thoughts on this coffee was that it had a delicate character when brewing on filter; citrus acidity with mango and melon notes. These notes were altered through espresso and milk-based where we found toffee and a molasses sweetness.
